Pre-heat oven to 350 degrees. Place puff pastry sheet in a skillet. Put into refrigerator until ready to use. Core and slice apples very thinly. Take out puff pastry and sprinkle with some of the sugar. place apple slices on top. Add lemon juice and vanilla. Add spices and sugar. Cut up butter into small chunks. Add to the top. Bake for 45 minutes to an hour or until apples are browned. Cool, then add caramel sauce.
