Easy Rustic Summer Cherry Galette

Ingredients

Pie Crust

  • 1 1/4 cups flour
  • 1/2 tsp salt
  • 6 tbsp butter, frozen and cubed
  • 1/4 cup shortening, cold
  • 3-4 tbsp ice water

Filling

  • 3 cups fresh cherries, stems and pits removed
  • 3 tbsp cornstarch
  • 1/2 cup sugar
  • zest and juice from 1 lemon
  • 1 tsp vanilla extract
  • 1 egg + 1 tsp water for egg wash

Instructions

Crust

  • Combine flour, butter, shortening, salt in a food processor. Pour in water until dough comes together. Shape into a disk. Wrap and place it in the refrigerator for 30 minutes or overnight. Roll dough out on a parchment lined floured surface into a 12 inch flat circle. Set aside.

Filling

  • Add cherries, sugar, cornstarch, lemon zest and juice, and vanilla to a mixing bowl. Stir until incorporated. Pour filling into the center of the dough. Spread it out slightly so that you stop about 2 inches from the edge of the dough. Fold the 2 inches of dough over the filling all around the galette one fold at a time until all of the dough is folded. Transfer galette on the parchment paper to a baking sheet.
    Beat egg and water in a small bowl. Use a pastry brush to brush the egg wash all over the crust. Place galette in a 350 degree oven and bake for 45-50 minutes until the crust starts to brown. Cool on a wire rack and top with vanilla ice cream or whipped cream if desired.
