Mozart White Chocolate Cheesecake Parfaits with Fresh Berries

Smooth cream cheese, velvety white chocolate and Mozart a white Chocolate liqueur make these parfaits oh so creamy and delicious!

Equipment

  • 6 coupe glasses
  • 1 stand mixer
  • 1 food processor

Ingredients

Berry Compote

  • 1/2 cup raspberries 
  • 1/2 cup diced strawberries 
  • 1 tsp lemon juice
  • 1 tbsp granulated sugar

Crust

  • 1 cup biscoff cookies or shortbread cookies (8-10)
  • 1 tbsp melted butter

Cheesecake

  • 2 8oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup Mozart White Chocolate Liqueur 
  • 1/3 cup white chocolate chips
  • 1/2 tsp vanilla 

Garnish

  • Raspberries 
  • Strawberries
  • Freeze dried raspberries 

Instructions

Berry Compote

  • To a small saucepan over medium heat, add raspberries, strawberries, sugar and lemon juice. Cook for approximately 10 minutes until the berries release their juices. Remove from heat and cool completely.

Crust

  • Add cookies and melted butter to a food processor. Pulse until the cookies are fully crushed. Set aside. 

Cheesecake

  • In the bowl of a stand mixer or in a medium bowl with a hand mixer, add softened cream cheese and powdered sugar. Mix until smooth.
    Melt the white chocolate by adding it to a double boiler on the stove, or to a small microwave safe bowl and microwave for about 30 seconds and stir until melted. After stirring after the 30 seconds, if the mixture is still not melted, then melt for additional 15 second increments and stir in between until it’s fully melted. 
    Add the melted white chocolate and Mozart White Chocolate Liqueur. Mix until fully blended and smooth. 

Assembly

  • Add 2-3 teaspoons of the cookie crumbles to the bottoms of 4-6 six ounce coupe glasses. Press down gently with a spoon. Add cheesecake filling to the glasses until the glasses are ¾ filled to the top. Refrigerate glasses for 4 hours or overnight.
    After refrigerating, add 1-2 tablespoons of the berry compote to the parfaits. Top with fresh raspberries, halved strawberries and crushed freeze dried raspberries. Serve.
