Lately, I’ve been kind of obsessed with pears. They taste great, and I love the way they look when they’re baked. I’ve been trying to put together more recipes that include these little beauties!
In the Fall, I love making pumpkin bread. It’s so moist and full of flavor. I wondered if I can use pears to make the same kind of delicious bread. So, I decided to try and substitute puréed pears for the pumpkin. I’ve been using the same pumpkin bread recipe since the early 90’s. A fellow teacher that worked with my mom gave us this recipe so long ago. It’s really amazing.
The recipe calls for can Pumpkin, which is cooked and puréed pumpkin. So, for the pears, I peeled and cored them, then I steamed them for 45 mi ties until they were tender. I steamed them to keep the nutrients in, but if you don’t have a steamer, you can boil them in a little water. Then, I put them in a food processor until they were puréed nicely.
From there I combined the puréed pears, eggs, oil and vanilla and mixed with a whisk. Then I added all the dry ingredients. Oil and flour a bread pan and pour in the batter. I then took one of my extra pears and cut it into slices without peeling and coring it. Lay 4-6 slices on top on the batter and sprinkle some chopped walnuts on top. Bake in a 350 degree oven for 55-70 minutes. Let it cool completely in a wire rack.
The pear bread comes out moist and delicious. And the arrangement of the pears on top make this bread beautiful. This recipe is definitely a keeper!
Pear Walnut Bread
Ingredients
- 1 1/2 cups pureed pears
- 2 eggs
- 1/2 cup oil
- 1 1/4 cups flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup chopped walnuts
