It’s #nationalcocoaday ! The best way to start these upcoming Winter months is with a Vanilla Cinnamon Hot Chocolate with Snowflake Marshmallows. Yummmmm! My son has me make hot chocolate for him every time we come in from the cold. And he always wants to go out. I think it may just be an excuse to make the hot chocolate! Lol
If you love hot, cold weather drinks, you should definitely try this Salted Caramel Latte with Irish Cream!
What kind of marshmallows can be used?
This hot chocolate can be topped with any kind of marshmallows. If you want to try these snowflake marshmallows, I used a great recipe that Leigh Anne Wilkes posted on her blog. You can get it here.
It’s Just gelatin, corn syrup, sugar, vanilla, and water.
After the marshmallows are made and the pan sits overnight, use a snowflake cookie cutter to cut them out. I used two different sizes just for variation.
Set them aside and start the hot cocoa.
How is the hot chocolate made?
This recipe makes 4 cups. If you want less, cut the recipe in half.
In a pot add 2 1/2 cups of milk, 1 1/2 cups of heavy cream, 2 teaspoons of vanilla extract, 2/3 cups sugar, 1/2 teaspoon cinnamon and 6 tablespoons cocoa powder. I used Dark Cocoa powder because I like a richer cocoa, but you can use regular cocoa as well.
I use a lot of heavy cream because I like a thick, creamier cocoa. Increasing the milk and decreasing the cream will thin it out a bit if you prefer.
Place over medium heat and stir until hot and all of the ingredients are melted in. I don’t let it come to boil. I take the pot off of the burner just before it starts.
Pour into 4 mugs and top with the snowflake marshmallows.
A perfect pairing for those cold winter days. Happy holidays!
