Everyone loves a great cookie. Whether you like them thick, thin, crispy, chewy, soft… cookies are just the best.
This cookie combines the chocolate chip classic with chunks of sweet and salty caramel.
And it’s so easy because you just mix everything into a bowl yourself. No need for a hand or countertop mixer.
For the caramel, I used Werther’s Originals soft caramels. Just unwrap each one, cut them into small pieces and add them to the dough. Delicious, simple and oh so good!
Recipe:
1/2 cup butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla
1 large egg
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cups All-Purpose Flour
1/2 cup bread flour
1 cup dark chocolate, chopped
8-10 pieces Wether’s Original Soft Caramels, unwrapped & cut into 2-3 pieces
Course Salt to sprinkle on top
In a mixing bowl, Cream butter with both sugars. Add vanilla and egg. Mix in salt, baking soda and both flours.
Stir in chopped chocolate and caramel pieces.
Place into the refrigerator for at least 30 minutes.
Pre-heat oven to 350 degrees. On a parchment lined baking sheet scoop rounds of the dough with a cookie scoop and place on baking sheet. Leave space between each one so they have room to spread. Sprinkle course salt on top of each.
Bake for 8-10 minutes. When you get to 7 minutes, start watching them so they do not brown. They will look under baked when they are done. Cool for 10-15 until cookies are set.
