English Toffee

I have really been missing out. I recently had English Toffee at a chocolate event and fell in love! The combination of sweet toffee, chocolate and salt was out of this world!

So, I had to make a batch for the holiday season. This is now my yearly candy treat!

Recipe:

1 cup salted butter

1 cup sugar

1 tbsp light corn syrup

1 cup chopped semi sweet chocolate

1 tbsp course sea salt

Spray a small cookie sheet with cooking spray. Place a sheet of parchment paper on top and up the sides.

In a pot, add butter, sugar and corn syrup. Bring to boil until mixture is amber in color. Pour on top of parchment lined pan.

Place chocolate in a bowl and microwave for about 40-50 seconds until slightly softened. Stir chocolate until smooth.

Let toffee slightly cool for about 5 minutes. Pour chocolate on top and smooth it out. Sprinkle salt on top and cool completely. You can also place the pan in the refrigerator to cool faster.

Break toffee into pieces before eating it.
