I think Banana Bread has become a recipe staple while we’ve all been home during the pandemic.
I’ve seen dozens of pictures come across my social media feed during these past months.
And they’ve been of all different types and flavors. People really get creative while in quarantine!
Banana bread is a quick and simple recipe that’s easy to put together. All you need is overripe bananas and a few more simple ingredients.
You can make each bread unique by adding different fruits, nuts, favoring sugar, anything.
For this banana bread I decided to add chocolate chips…. ok… a lot of chocolate chips. And freshly sliced bananas on top.
This recipe is definitely a keeper!
Moist Chocolate Chip Banana Bread
Banana bread filled with bananas and chocolate chips
Ingredients
- 1 1/2 cups mashed bananas
- 1 stick butter, softened
- 1 1/4 cup sugar
- 2 eggs
- 1/2 cup buttermilk
- 1 tsp vanilla
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 whole banana, for the top, sliced lengthwise
- 1/2-3/4 cup chocolate chips
Instructions
- Pre-heat oven to 350. Mix bananas, butter, sugar, vanilla, eggs and buttermilk. Add the flour, salt, baking soda & cinnamon. Pour into a parchment lined loaf pan. Top with banana slices, and chocolate chips. Bake for an hour. Cool on a wire rack.
