
Full disclosure…. This was my first time trying Dragon Fruit. I really didn’t know what to expect going in. The flavor is very mild. As mild as a kiwi. With the color of deep pink.

I picked some up at a specialty supermarket because I’ve always wanted to try it. And then I decided to turn this unique fruit into ice pops.
And it was so simple. I blended the peeled, cut dragon fruit with coconut milk and a little heavy cream and poured the purée into Popsicle molds. Froze them overnight and voila! The most beautiful color popsicles I’ve ever seen!
And perfect for the hot Summer weather!

Dragon Fruit Coconut Popsicles
- 1 can coconut milk
- 1 1/2 cups Dragon Fruit, peeled and cubed
- 1/4 cup heavy cream
- 2 tbsp honey (optional)
- 6 Cavity Popsicle Mold
- Popsicle Sticks

Place all ingredients into a blender and blend until puréed. Divide between 6 popsicle molds. Add popsicle sticks and Freeze for 8 hours or overnight.
