This is actually my dream baking set! The 9 inch round baking pan was perfect for my Easy Pear Cranberry Walnut One Layer Cake.
Here’s how I made it:
Mix wet ingredients for the cake. I prefer to use oil in my cakes instead of butter because oil makes the cake softer. It is a preference, but you can easily substitute the oil with 1/2 cup of softened butter if you prefer.
Add the dry ingredients and mix in a stand mixer. Pour into a parchment lined, buttered and flour 9 inch round pan. Using the parchment is not a necessity. The cake will not stick either way. These Calphalon Premier™ pans are extremely non-stick. I just find it easier to lift the cake up with the parchment on it.
Cut each pear in half. Core and slice them, but keep the halves together. Arrange pear slices halves on top of the batter in a pattern. Turning the pear halves in different directions. Add the cranberries and walnuts. Then, sprinkle the top with a cinnamon sugar mix. Bake for and hour, then cool on a wire rack.
This cake makes a great holiday dessert!

Easy Pear Cranberry Walnut One Layer Cake
Ingredients
- 1/2 cup olive oil
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 1/2 tsp baking power
- 1/4 tsp salt
- 1 cup buttermilk
- 3-4 pears, cored and sliced
- 1 cup cranberries
- 1/2 cup walnuts, chopped
Topping
- 2 tbsp sugar
- 1 tsp cinnamon
Instructions
- Pre-heat oven to 350 degrees. Line the Calphalon Premier™ 9 inch round pan with parchment paper. Oil and flour the sides of the pan. In a Standing mixer bowl add oil and sugar. Mix in eggs. Add vanilla. Mix. Add dry ingredients and buttermilk and blend. Pour into the pan. Arrange sliced pears on top. Add cranberries on top of the pears. Sprinkle on walnuts. Mix the 1/4 cup sugar and cinnamon. Sprinkle on top of the cake. Bake for 1 hour to 1 hour and 15 minutes. Cool and serve on a cake platter
