What’s Your Favorite Way To Eat S’mores?
Since It’s #nationalsmoresday we’re having this rich, gooey, Easy S’mores Chocolate Chip Cookie Skillet! And we just had to top it with creamy vanilla ice cream!
What are S’mores?
S’mores are traditionally a campfire treat, consisting of one or more toasted marshmallows and a piece of a chocolate bar sandwiched between two pieces of graham crackers.
As per Food & Wine Magazine, The first official recipe for a s’more came out in a Girl Scouts guidebook in 1927. The recipe was originally called the “Some More.” And it was intended to feed a large group of hungry Girl Scouts.
Why make a s’more into a cookie skillet?
I love cookie skillet recipes because it’s like having a huge soft deep dish cookie that you can scoop out and add ice cream to. And S’mores are the classic Summer treat. So, why not combine both in one delicious dessert?
How is the S’mores Chocolate Chip Cookie Skillet made?
Start with making a homemade easy cookie dough recipe. Melt 2 sticks of butter. Add it to a bowl with brown sugar, eggs, vanilla, baking soda, baking powder, salt, all purpose flour and bread flour and a generous amount of chocolate chips. I mean, the more chocolate, the better right?
For my chocolate Chip Cookie recipes, I like to use a combination of all purpose flour and bread flour. Bread flour is supposed to make chocolate chip cookies more chewy. You’re raising the protein to enable more gluten formation and higher liquid retention in the dough.
You can also use 2 cups of all purpose flour if you want to omit the bread flour all together.
Press half of the chocolate chip cookie dough into a cast iron skillet. Add pieces of graham crackers, chocolate bars and marshmallows. Then top it with the rest of the cookie dough and bake until it’s fully baked around the sides and doughy and gooey in the middle.
If the marshmallows are not toasted enough, set the oven to broil for a few minutes until they’re nice and toasty!

S’mores Chocolate Chip Cookie Skillet
Ingredients
- 1 cup (2 sticks) butter
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cups all purpose flour
- 1/2 cup bread flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups chocolate chips
- 4 squares graham crackers
- 6-8 large marshmallows sliced in half
- 2 dark chocolate bars
Instructions
- In a saucepan, melt butter. Slightly cool and pour into a mixing bowl. Add sugar, vanilla, eggs, and dry ingredients. Mix until incorporated. Add chocolate chips and stir.Press half of the cookie dough into a large oven safe skillet pan. Break graham crackers in half and place over the dough. Break the chocolate bars into pieces and add them and the halves marshmallows to the skillet as well. Use a small cookie scoop or a spoon to add the rest of the dough to the skillet. Use a spoon to spread out the dough slightly.Bake in a 350 degree oven for 30 minutes. The center will not be set when you remove it from the oven. Cool slightly and top with ice cream if desired.
