Happy First Day of October! And it also happens to be National Pumpkin Spice Day! And to celebrate, I’ve teamed up with @eaglebrandmilk to bring you these seasonal Pumpkin Spiced Cream Cheese Swirled Muffins.
How do you use pumpkin spice?
Pumpkin spice is usually most popular during the Fall. It’s used in making pumpkin pie, and personally, I use it in a lot of dessert recipes that call for cinnamon and other similar spices like apple pie and sweet potato pie. It’s convenient to use because it combines spices that often go together.
What does pumpkin spice consist of?
Pumpkin Spice is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.
What is in the pumpkin spiced muffins?
I made these Pumpkin Spiced Cream Cheese Swirled Muffins using my pumpkin bread recipe that I’ve been using since I was in high school. A co-worker of my mother gave us this moist pumpkin bread recipe and we’ve been using it ever since.
Add Pumpkin purée, sugar, oil, eggs, buttermilk, and spices together in a bowl. Mix until everything is incorporated. Then add the flour, baking powder and baking soda. Use a whisk until blended. You can also use a stand or hand mixer.
Add a muffin liner to each muffin tin well so the muffins don’t stick. Divide the batter between them. It should fill up 2/3 of the way.
Make the cream cheese filling by adding cream cheese, vanilla extract and Eagle Brand Condensed Milk. You don’t need any sugar because you get the sweetness from the condensed milk. Blend with a hand mixer until smooth. It should be the consistency of cheesecake batter. Add 1-2 teaspoons of the cream cheese mixture to each muffin well. Use a toothpick, butter knife or an offset spatula to mix the two batters together until you have a nice swirl.

Ingredients
Muffins
- 1 1/2 cups flour
- 1/2 tsp salt
- 1 cup sugar
- 1 tsp baking soda
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 2 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/4 cup buttermilk
Cream Cheese Swirl
- 1/2 can Eagle Brand Condensed Milk
- 1 8oz bar cream cheese, softened
- 1 tsp vanilla extract
Topping
- pumpkin seeds
Instructions
- Pre-heat oven to 350 degrees. Mix pumpkin, oil, eggs, buttermilk, and spices together. Add the dry ingredients and mix again. Divide batter between 18 lined muffin wells by filling them 2/3 full.Add 1-2 tsp of cream cheese batter to each muffin. Use a toothpick to swirl the batter and cream cheese mixture together. Sprinkle a few pumpkin seeds on each one.Bake for 30-35 minutes. Cool on a wire rack.

- Add cream cheese, condensed milk and vanilla to a bowl. Beat with a hand mixer until smooth.
