Easy Open Faced Egg Breakfast Sandwich

Ingredients

  • 1 egg
  • 1 tsp butter
  • 2 pieces ham, thinly sliced
  • 1 slice swiss cheese
  • 1 cup fresh spinach
  • 1 tbsp olive oil
  • 1 slice bread (sourdough, brioche, white)
  • salt and pepper to taste

Instructions

  • Toast bread slice in a toaster, then place on a plate and set aside.
    In a pan over medium heat add olive oil. Once oil is hot ad spinach. Sauté and season with salt and pepper. When it just begins to wilt, place spinach on top of toasted bread.
    In the same pan heat the ham until hot. Add on top of the spinach. Place swiss cheese on top of the ham.
    In a pan over medium heat, add the butter. Cook the egg in the pan sunny side up, then add on top of the cheese. Add salt and pepper to taste. Top with chopped parsley if desired.
