Creamy Tuscan Soup

- 1 lb sweet Italian pork or turkey sausage
- 1 tbsp olive oil
- 1 large onion, chopped
- 4 gloves garlic, minced
- 1 cup sliced mushrooms
- 1 tsp Italian seasoning
- 1/2 cup sun-dried tomatoes, drained and chopped
- 6 cups chicken broth
- 3 cups kale, chopped
- 1 cup heavy cream
- Salt & pepper to taste
- Parsley, chopped, to garnish
Form the sausage into small round balls. Add to a frying pan over medium heat until browned on all sides. Remove from heat. To a large pot over medium heat add olive oil. Add onions, garlic, mushrooms and Italian seasonings and sauté until softened. Add sun dried tomatoes and chicken broth. Bring to a low boil, then add sausage and cook for about 10 minutes. add heavy cream, then salt and pepper to taste. Serve into soup bowls and garnish with chopped parsley.
