Scoop out different flavors of your favorite or specialty ice cream and place the scoop between two of the cookies. You can add sauces after you place the scoop onto the first cookie. You can also roll the ice cream exposed sides of the sandwich in sprinkles. Place in a parchment lined pan and freeze until solid.
