Peach Bourbon Glaze Peach Bundt

Ingredients

Cake

  • 1 cup olive oil
  • 1 1/2 cups sugar
  • 4 eggs
  • 2 tsp vanilla
  • 3 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1 cup peach purée
  • 1/2 cup chopped peaches (optional)

Peach Puree

  • 1 cup peeled and chopped peaches
  • 1-2 tbsp water

Glaze

  • 3/4 cup peaches, puréed
  • 2/3 cup sugar
  • 1-2 tbsp bourbon

Instructions

Cake

  • Pre-heat oven to 350 degrees. Oil and flour a standard sized Bundt pan. In a Standing mixer bowl add oil and sugar. Mix in eggs. Add vanilla, and peach purée. Mix. Add dry ingredients and buttermilk and blend. Add chopped peaches if desired. Pour batter into the pan.

    Bake for 1 hour to 1 hour and 15 minutes. Cool and pour on glaze.

Peach Purée

  • Add peaches and water to a blender. Purée until smooth.

Glaze

  • Add ingredients to a small pot and cook until sugar is dissolved for about 5-10 minutes
