Pear Walnut Bread

Whole slices of pears make this bread a show stopper!

Ingredients

  • 1 1/2 cups pureed pears
  • 2 eggs
  • 1/2 cup oil
  • 1 1/4 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup chopped walnuts

Instructions

  • For the pureed pears, peel and cored them, then steam them for 45 minutes until they are tender or boil them in a little water. Then, put them in a food processor and purée.
    Combined the puréed pears, eggs, oil and vanilla and mixed with a whisk. Then add all the dry ingredients. Oil and flour a bread pan and pour in the batter. Take one of the extra pears and cut it into slices without peeling and coring it. Lay 4-6 slices on top on the batter and sprinkle some chopped walnuts on top. Bake in a 350 degree oven for 55-70 minutes. Let it cool completely in a wire rack.
