Seared Pork Chops with Spicy Peach Honey Glaze

Juicy pork chops seared to perfection glazed with a spicy peach honey sauce

Ingredients

Pork Chops

  • 4 bone in thick pork chops
  • salt & pepper to taste
  • 1 tbsp vegetable oil
  • 2 tbsp butter
  • 2 rosemary sprigs
  • 4 thyme sprigs

Glaze

  • 3/4 cup peach preserves
  • 1/4 cup orange juice
  • 3 tbsp honey
  • 1/2 tsp whole grain mustard
  • 1/2 tsp chopped jalapeƱo
  • 2 sprigs of fresh thyme
  • salt and pepper to taste

Garnish

  • 2-3 fresh peaches
  • 1/4 cup brown sugar

Instructions

Pork

  • Set Stainless Steel fry pan over medium to high heat. Heat until hot. Season pork chops with salt and pepper. Add oil and sear pork chops on each side including the back side of the meat where the thicker fat is.
    Add butter and herbs to the pan. Baste the chops with the melted butter on both sides until meat is cooked to about 145 degrees. Do not over cook. Remove pan from the heat.

Glaze

  • In a small pot add all ingredients for the glaze. Cook over medium heat until the preserves are melted and the glaze starts to bubble. Brush or spoon onto both sides of the chops. Place on a platter.

Garnish

  • Cut peaches in half and remove the pit. Cut peach halves into thick slices. Dredge them into the brown sugar. heat a grill pan and brush with a little oil. Grill peach slices on both sides. Add peaches to the pork chops.
