Strawberry Filled Vanilla Layer Cake with Cream Cheese Frosting
Ingredients
Vanilla Cake
2cupsbuttermilk
2eggs
1cupoil
4tbspvanilla
2cupssugar
3cupsflour
1/2tspsalt
2tspbaking powder
2tspbaking soda
Strawberry Filling
1 1/2cupsfresh strawberries, sliced
1/4cupsugar
1tspcornstarch
1tbspwater
Cream Cheese Frosting
8ouncescream cheese
1stickbutter
5cupspowdered sugar
2tbspheavy cream
Instructions
Strawberry Filling
Combine Strawberries and sugar in a saucepan. In a separate bowl, mix cornstarch and water. Mix into the strawberries over medium heat. Cook until cornstarch is dissolved. Cool and refrigerate overnight.
Vanilla Cake
Mix oil, sugar and eggs. Add vanilla, salt, baking soda, baking powder, and flour. Add buttermilk. Pour into 3 6 inch pans and bake for 35-45 minutes. Cool on a wire rack.
Frosting
Blend all ingredients until smooth.
Assembly
Level each layer so there is no dome. Frost the first layer. Add some of the frosting to a pastry bag and pipe a border around the layer. This will prevent the strawberry filling from leaking out. Add the filling, then repeat with the last two layers. Cover the top and sides with the frosting and smooth. Top with fresh flowers.
