Strawberry Layer Cake

Ingredients

  • 1 cup buttermilk
  • 1 cup pureed strawberries
  • 2 eggs
  • 1 cup oil
  • 4 tbsp vanilla extract
  • 2 cups sugar
  • 3 cups flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 tsp baking soda

Pureed Strawberries

  • 1 1/2 cups chopped fresh strawberries
  • 1 tbsp sugar
  • 1/2 tsp lemon juice (optional)

Frosting

  • 8 ounces cream cheese
  • 1 stick butter
  • 5 cups powdered sugar
  • 1/4 cup pureed strawberries

Instructions

Strawberry Puree

  • Combine all ingredients in a sauce pan. Cook for 10 minutes until sugar is dissolved. Puree in a blender, then strain. Cool completely or refrigerate overnight.

Cake

  • Pre-heat oven to 350. Butter and flour a sheet pan.
    Mix oil, sugar and eggs. Add vanilla, salt, baking soda, baking powder, and flour. Add buttermilk and strawberry puree. Pour into two 9 inch round pans and bake for 45 minutes. Cool on a wire rack.

Frosting

  • Blend all ingredients for frosting, and frost the cake stacking each layer on top of the other.
