Chocolate Orange Brioche with a Simple Syrup Glaze

Looking at social media lately, I’ve been noticing so many pictures and recipes for Brioche bread. What caught my eye was the beauty of this wonderful bread. The swirls of chocolate, cinnamon and other flavors of fillings weaving through the layers of dough was incredible! I’ve never made it before, but I wanted nothing more than to try it for myself.
I decided to use a sweet dough recipe that I’ve made before for cinnamon rolls. I couldn’t decide between the cinnamon filling or a chocolate filling, so I made both and combined them together… why not?
I found out the technique to shaping the bread online, so I was all set. Mix the ingredients for the dough and placed it in a bowl in the refrigerator to rest overnight. The night day, roll out the dough into a rectangle, mix the filling and spread it on the dough. Roll it up, cut it in half and twist the dough around each other. Place ion a baking sheet, let it rise and bake. It was so delicious!

Chocolate Orange Brioche with a Simple Syrup Glaze

Ingredients
  

  • 1 package yeast
  • 1 cup buttermilk
  • 1 egg
  • 1 tsp vanilla
  • 2/3 cup sugar
  • 1 tsp salt
  • 3 cups flour
  • 6 tsp softened butter
  • zest of one orange

Filling

  • 2 1/4 oz dark chocolate
  • 1/4 cup butter
  • 1/4 cup powdered sugar
  • 1/3 cup cocoa powder

Instructions
 

  • Warm buttermilk in the microwave until slightly warm but not hot. Pour in a Kitchenaide bowl. Sprinkle yeast on top. Let it sit for 5 minutes. Add sugar, salt, vanilla, egg and zest. Attach dough hook and turn on the machine. Add the flour a cup at a time. After the flour is in, add the softened butter a tbsp at a time. Let the dough kneed for a few minutes. Place the dough in an oiled bowl, cover with plastic wrap and place in the refrigerator overnight.
    The next day start with making the chocolate. Place dark chocolate in a microwave safe bowl with the butter. Microwave until melted. Add cocoa powder and powdered sugar and mix.
    Take out dough from the refrigerator. Roll out dough into a rectangle.
    Spread 1/2 of the chocolate mixture over the dough. Roll up from the short side. Cut down the middle so that you have 2 halves. Twist the two halves together.  place on a sheet pan and let it rise for about an hour.   Bake in a 350 oven for about 20 minutes or until browned.
