Vanilla Cupcakes with Mint Green Frosting

St. Patrick’s Day is here! When you think of St. Patrick’s Day, what color do you think of?…. Green of course!

So when my son said he wanted to make cupcakes on St. Patty’s day, I knew that we had to incorporate green into them. So, we decided to tint the frosting mint green. When they were done, we colored some confetti sprinkles with edible gold color to add to them. They were perfect for the holiday!

Cupcake recipe is from Gal On a Mission.  It’s the best vanilla cupcake recipe i’ve ever had.  Recipe makes a dozen cupcakes. Enjoy!

Vanilla Cupcakes with Mint Green Frosting

Ingredients
  

  • 1 cups buttermilk
  • 1 eggs
  • 1/2 cup oil
  • 2 tbsp vanilla
  • 1 cups granulated sugar
  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1 tsp baking soda

Buttercream Frosting

  • 3 cups powdered sugar
  • 1/3 cup butter
  • 1 1/2 tsp vanilla
  • 1 to 2 tbsp milk

Instructions
 

  • Pre-heat oven to 350 degrees.  Mix oil and sugar.  Add egg,  vanilla, salt, and baking soda.  add flour.  Pour in buttermilk and mix.  Scoop into lined cupcake pan.  Bake for 15-20 minutes or until browned.  Cool on wire rack.

Buttercream Frosting

  • Mix ingredients for frosting.  Put into a piping bag with a tip attached.  Pipe frosting onto cupcakes.  Sprinkle with gold sprinkles.
