Cinnamon Chocolate Swedish Buns with Sugar Pearls

There are so many designs that can be made with different pastry dough. The Swedish buns are so pretty. The dough is filled with cinnamon, sugar, cocoa and butter. These ingredients merge together into a beautiful filling that tastes delicious.

The dough is twisted and wrapped around so that it makes an elegant shape. After they’re made, you can see the beautiful ribbons of cinnamon and chocolate.

For the dough to hold its shape when you’re finished twisting it, you need a good sweet dough recipe with a good amount of flour. I used Thida Bevington’s Sweet Dough recipe. Her measurements are in grams, so I converted it to cups and spoons using a conversion calculator. If you want the original recipe in grams, make sure to stop by her Instagram page.

This is really one of my favorite dough designs. I plan to make this recipe for many mornings.

Cinnamon Chocolate Swedish Buns with Sugar Pearls

Ingredients
  

  • 1 cup milk
  • 4 1/2 tsp butter
  • 3 1/2 cups flour
  • 2/3 cups sugar
  • 3 tsp yeast
  • 1 egg
  • 1 tsp salt
  • sugar pearls

Cinnamon Chocolate Filling

  • 1 stick butter, melted
  • 1 cup granulated sugar
  • 1 tbsp cinnamon
  • 1/3 cup cocoa powder

Instructions
 

  • Heat milk until warm.  Pour into a mixing bowl.  Sprinkle yeast on top.  Let it rest for 5 minutes.  Add sugar, egg, salt, and flour.  Use a dough hook attachment and turn it on medium speed.  Add butter one tablespoon at a time. Knead.  Place in a lightly greased bowl, cover with plastic wrap and place in refrigerator overnight. Roll out dough into a rectangle.  Brush 1/2 of the melted butter over the middle 1/3 of the dough.  Mix sugar, cinnamon, and cocoa.  Sprinkle half of the mixture over the butter.  Fold one side of the dough over the middle 1/3.  Brush remaining butter over the dough that just covered the middle 1/3.  Sprinkle the rest of the filling.  Cover with first 1/3 of the dough.  Roll it out more.  Cut into six strips.  Twist each strip completely then wrap around your hand until it forms a knot.  Place on a parchment lined baking tray.  Repeat with remaining 5 pieces.  Brush with beaten egg, egg wash.  Sprinkle on pearl sugar.  Bake in a 350 degree oven for about 20 minutes or until browned.  Cool on a wire rack.
