Blueberry Frosted Doughnuts

I think my son and I have come to love baking or cooking something together on Sundays. During the week, I was trying to decide what I wanted to make this weekend when he asked me, when were we going to make doughnuts together? Well, that settled it then. Doughnuts on Sunday!

Here are some blueberry frosted and vanilla glazed that we made. The doughnut recipe that we used is the Krispy Kreme recipe. We made them a little bigger than what you’re supposed to though. Lol!

I use blueberry powder to make the glaze. You Can usually find it on Amazon. It’s part of the health food section. You can also just get freeze dried blueberries, which I did, and pulse them through the food processor. Then sift it to get the larger pieces out. This way takes a lot more time, but the freeze dried fruit is cheaper then the powder.

Blueberry Frosted Doughnuts

Ingredients
  

  • 2 envelopes yeast
  • 1/4 cup warm water
  • 1 1/2 cups lukewarm milk
  • 1/2 cup sugar
  • 1 tsp salt
  • 2 eggs
  • 1/3 cup shortening
  • 5 cups flour
  • oil for frying

Blueberry Glaze

  • 2 cups powdered sugar
  • 2 tbsp Blueberry powder
  • 1/4 cup milk
  • 1 tsp vanilla

Instructions
 

  • Dissolve yeast in water in a standing mixer. Add the rest of the ingredients. Attach the dough hook and mix until incorporated. Place in a greased bowl and cover with plastic wrap. Put it in the refrigerator over night. The next day roll out dough and cut into doughnut rings. Place on a cookie sheet. Cover with plastic wrap and let it rise for an hour. Heat oil to 350 degrees and fry on both sides until golden brown. 

Blueberry Glaze

  • If you are using freeze dried blueberries, grind them in a food processor, then sift. 
    Whisk together 2 cups powdered sugar, 2 tbsp blueberry powder, 1/4 cup milk and 1 teaspoon vanilla until smooth. When the doughnuts are cool enough to handle, dip into the glaze.
