Vanilla Layer Cake with White Chocolate Buttercream and Dark Chocolate Ganache

Combining white chocolate and dark chocolate marries so well together. It’s the best of both chocolate worlds, the Ying and the Yang so to speak.

I wanted to put these two chocolate flavors into a cake. This Vanilla Layer Cake with White Chocolate Buttercream and Dark Chocolate Ganache does just that.

It has the white chocolate inside and the dark chocolate outside.  Garnished with white flowers, brings out the beauty of the cake.

Vanilla Layer Cake with White Chocolate Buttercream and Dark Chocolate Ganache

Ingredients
  

  • 2 cups buttermillk
  • 2 eggs
  • 1 cup oil
  • 4 tbsp vanilla
  • 2 cups sugar
  • 3 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Frosting

  • 1 stick butter
  • 3 cups powdered sugar
  • 1/2 tsp vanilla
  • 2 oz white chocolate, melted
  • 1/3 cup heavy cream

Dark Chocolate Ganache

  • 2 ounces dark chocolate
  • 2 tbsp heavy cream

Instructions
 

  • Pre-heat oven to 350 degrees. Mix oil and sugar. Add egg, vanilla, salt, and baking soda. add flour. Pour in buttermilk and mix. Pour into oiled and floured 9x13 baking pan. Bake for 15-20 minutes or until browned. Cool on wire rack.

Buttercream

  • In a mixer, blend butter, white powdered sugar, add heavy cream. Then blend in melted white chocolate, and vanilla.  

Ganache

  • Place chocolate and cream in a bowl in the microwave, heat until cream is hot.  The chocolate will not look melted.  Stir until ganache is creamy.  Add more cream if needed.

Cake Assembly

  • Trim off outsides of cake, and cut it in half lengthwise.  Slice each cake layer in half, so that you have 4 rectangular cake layers.  Place one layer down and cover with buttercream.  Repeat with other 3 layers, and cover the entire cake with frosting.  Fill a pastry bag with ganache.  Pipe the ganache drips around the whole cake, some shorter than others.  Pipe more ganache on top and smoothe it until the top is covered.  Garnish with fresh flowers.
