The flowers are finally just starting to bud from the trees! Spring has sprung and that is all I can think about! The colors on this Vanilla Sheet Cake with Passion Fruit Cream Cheese Frosting screams Spring and warmer weather on the way.

The cake recipe is a The Vanilla Cupcake recipe from Gal On A Mission . I’ve been making it for a few years now, and it’s the best from scratch vanilla cupcake recipe I’ve tried. And I’ve tried many! It really yields the perfect moist cupcake.

To make it into a sheet cake, I doubled the recipe and added baking powder. I also added my own frosting recipe to the cake. Passion Fruit also makes me think of warmer weather, so I had to incorporate it into the cream cheese frosting.

I used passion fruit puree by Goya foods.  You can get it in the supermarket in the frozen food isle. Just thaw, and add it to your recipe.

Vanilla Sheet Cake with Passion Fruit Cream Cheese Frosting

Ingredients
  

  • 2 cups buttermilk
  • 2 eggs
  • 1 cup oil
  • 4 tbsp vanilla extract
  • 2 cups sugar
  • 3 cups flour
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 2 tsp baking powder

Frosting

  • 8 ounces cream cheese
  • 1 stick butter
  • 5 cups powdered sugar
  • 1/4 cup passion fruit puree
  • yellow gel color
  • peach gel color

Instructions
 

  • Pre-heat oven to 350. Butter and flour a sheet pan.
    Mix oil, sugar and eggs. Add vanilla, salt, baking soda, baking powder, and flour. Add buttermilk. Pour into a 9x13 pan and bake for 45 minutes. Cool on a wire rack.

Frosting

  • Blend ingredients for frosting. Divide frosting in half into 2 bowls.  Color one bowl yellow, and the other peach.  Fill 2 pastry bags  with each color. Pipe on Cake as you like.
