I recently had an order for two dozen cupcakes with chocolate covered strawberries arranged in a number 37 for a birthday. It was easy to make, but almost impossible to transport to the customer. The heavy strawberries made the cupcakes topple over on their side.
So, I began looking online to find a better way to carry them. That’s when I found Sophia Mya Cupcakes’ Instagram page. She had actually discovered a way to use number and letter shaped paper mache boxes that she cut out the top and placed cupcakes inside! Holy moly! What an insanely great idea! She is a genius!
So, for Mother’s Day, I decided to make rose decorated cupcakes and place them in two “M” boxes and one “O” box, for “MOM.” These are 24 mini cupcakes, not regular size, so they’re a little cuter.
I didn’t know how to pipe the roses, so I watched many tutorials on YouTube until I got it right. I think they came out pretty good!
Rose Cupcakes
Ingredients
- 1 cup buttermilk
- 1 egg
- 1/2 cup oil
- 2 tbsp vanilla
- 1 cup granulated sugar
- 1 1/2 cup flour
- 1/4 tsp salt
- 1 tsp baking soda
Buttercream
- 1 stick butter
- 2 cups powdered sugar
- 1 tsp vanilla
- 1 tbsp milk
- pink food gel
Instructions
- Pre-heat oven to 350 degrees. Mix oil and sugar. Add egg, vanilla, salt, and baking soda. add flour. Pour in buttermilk and mix. Scoop into oiled and floured mini cupcake pan. Bake for 15-20 minutes or until browned. Cool on wire rack.
Buttercream
- Mix butter, powdered sugar, vanilla and milk. add a few drops of food gel. Fill a pastry bag with a rose petal tip with the buttercream. Pipe the buttercream in a rose petal pattern on the cupcakes. Makes 2 dozen.
