Happy Mother’s Day and Happy National Apple Pie Day! What a great day to celebrate both.
I made this Apple Caramel Pie in celebration of both.

I had fun making this pie crust decor. I’ve done cutouts many times, but this was my first time making pie dough braids. I thought it may fall apart and crumble as braided it, but miraculously, it held up. Probably because I let the dough rest in the refrigerator overnight. Definitely a must!

When you make the design for this pie, make sure to use many cookie and dough cutters of various flower shapes and sizes. It gives it a beautiful look! Mix in a few of the braids as well. I used 2 in the lattice and 2 along the edges. You can definitely use more. Play around with it and have fun!

Apple Caramel Pie

Ingredients
  

  • 5 apples, peeled, cored and sliced
  • 1 cup brown sugar
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp vanilla
  • 2 tbsp butter
  • 2 tbsp flour

Pie Crusts

  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 1/2 sticks butter, cubed and frozen
  • 1/2 cup vegetable shortening
  • 6-8 tbsp ice water

Instructions
 

Crusts

  • combine flour, butter, shortening, salt in a food processor. Pour in water until dough comes together. Shape into a disk. Wrap and place in the refrigerator overnight. The next day, divide dough into 2 pieces. Roll out one half and place in a pie dish. Roll out second half.  Cut strips for a lattice crust.  Other decor includes cutting 12 thin strips.  Use 3 at a time and make a braid.  Repeat with other thin strips.  Use leaf and flower cutters to cut out shapes. 

Filling

  • Combine all ingredients for the filling in a bowl. Pour into bottom crust.  

Assembly

    Make a lattice crust with dough strips and/or braids. Also top with leaf and flower cut outs. Bake in a 350 degree oven for about 1 hour or until browned.
