To kick off the holiday season, here’s a fabulous holiday cocktail, Cranberry Thyme Gin & Tonic from A Cozy Kitchen. She has so many amazing recipes. This is just one great one. Perfect for your holiday parties!

It’s so refreshing and not hard to make at all. Start with making a simple syrup with cranberries.  The only change I made to the recipe is to puree the simple syrup instead of just mashing the cranberries.  I like a puree for cocktails. But you can just mash the cranberries after they cook if you do not want to puree, like in the original recipe.

You can make this the day before so that it has time to cool and get cold. In a pot combine sugar, water, cranberries, orange juice, vanilla and thyme. Cook for about 10 minutes. Remove thyme and purée in a food processor. Strain to get rid of the solids. Place into a container and refrigerate overnight.

To make the cocktails, get 2 low ball glasses and add ice. Add 2 ounce of the purée and 2 ounces of gin. Add tonic water to fill the glass. Garnish with lime slices, cranberries and fresh thyme.

These cocktails are were a hit at my holiday dinner and taste amazing!

Cranberry Thyme Gin and Tonic

Ingredients
  

  • 3/4 cup fresh cranberries and more for garnish
  • 1/4 cup sugar
  • 1/2 cup water
  • splash of orange juice
  • 1/4 tsp vanilla
  • fresh thyme
  • Gin
  • Tonic Water
  • slice of limes

Cranberry Simple Syrup

  • In a small saucepan, mix together the cranberries, sugar, water, splash of orange juice, 1 sprig of thyme and vanilla extract. Cook for 10 to 15 minutes. Remove thyme stem. Pour into a blender and puree the mixture.  Strain to remove solids.
    Add ice to 2 lowball glasses. Add about 1 ounce of the puree to each glass. Top with 2 ounces of gin and then top with tonic. Mix and garnish with slices of limes, cranberries and fresh sprigs of thyme.
