When Sarah Gold Nutrition shared her recipe for her Shaved Kale and Brussel Sprout Salad with Lemon-Tahini Dressing, I knew I had to try it. It looked so good in the picture.
The only thing was, not only had I never had tahini before, I didn’t even know what it looked like. I thought maybe it was a seasoning. So many food bloggers cook and bake with tahini all the time, but I never had.
So, there I was in Fairway Supermarket looking for tahini. Truthfully, at that point I decided to look it up online in images. I was surprised that it looked like a jar of peanut butter. So, I decided to start there, and there it was, next to the peanut butter!
You combine the tahini in a bowl with lemon zest and juice, honey, garlic, salt and water for the dressing.
Then, here is where I cheated. I bought a bag of already chopped kale and already shredded Brussels sprouts. Made it a lot easier. Haha!
Toss the veggies with the dressing and top with pecans and pomegranates.
It was a hit at my Thanksgiving Table, and I’ve made it twice since then!
This salad is the best!
