Salted Caramel Pear Pie

This Salted Caramel Pear Pie was another great bake for The 25 Days of Collabs. The theme was Doves/ Peace on Earth, so I decided to give this pear pie Dove cut outs.

It literally looked like little doves were flying over it after it was made. I used different sized dove cookie cutters from JB Cookies Cutters.

Make you pie crust dough. Refrigerate half and roll out the other half for the dove shapes. After you cut them out, place them on a baking sheet and put them in the freezer overnight. This helps with keeping their shape after placing them on the pie and baking.

The next day, make the pie filling. I used 6 pears, that I peeled, cored and slices. Toss them with lemon juice, sugar, spices, flour and salted caramel.

Roll out the other half of the dough. Place it in a pie pan. Add the filling to the bottom crust. Place a few pieces of butter on top. Remove Doves from the freezer. Place them on top of the filling. Let them overlap a little. Brush with an egg wash of 1 egg and a tablespoon of water. Bake until browned.

Serve with vanilla ice cream. Definitely a must try!

Salted Caramel Pear Pie

Pie Crust

  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 1/2 sticks butter, cubed and frozen
  • 1/2 cup vegetable shortening
  • 6-8 tbsp ice water

Filling

  • 6 pears, peeled, cored and sliced
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp vanilla
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 cup salted caramel

Dough

  1. Combine flour, butter, shortening, salt in a food processor. Pour in water until dough comes together. Shape into two disks. Wrap each and place one in the refrigerator overnight. Place the other in the refrigerator for about an hour. Take out the second half and roll it out.
  2. Use dove shaped cookie cutters to cut out the birds.  Place cut outs on a half size baking sheet and place into the freezer overnight. 

Pie

  1. Combine all of the ingredients except the butter.  Stir until well combined.  Set aside

Assembly

  1. The next day, roll out the first half and place in a pie dish. Add the pear filling. Cut up the 2 tablespoons of butter and spread them out over the filling.  Lay the Dove cutouts on top of the pie. Trim off the excess dough around the sides. Bake in a 400 degree oven for an hour or until browned. Cool on a wire rack.
