Pear Topped One Layer Vanilla Cake

March definitely came in like a lion this year! Snow in March! And I know I’ve been complaining about Winter and thinking about Spring, but you know what? The snow was actually beautiful. So, I decided to take my camera outside today and take a couple of snowy pics.

This one layer vanilla cake recipe is perfect for a small birthday cake, or just a weekend baking project. If you want to regular sized two layer cake, then double the recipe.

Cake:

1 cup buttermilk

1 egg

1/4 cup oil

2 tbsp vanilla

1 cup sugar

1 1/2 cup flour

1/4 tsp salt

1 tsp baking powder

1 tsp baking soda

Frosting:

1 1/2 sticks of butter (softened)

2 1/2 cups powdered sugar

1 tsp vanilla

1 tbsp heavy cream

2 Pears for garnish

Pre-heat oven to 350 degrees. Grease and flour or sugar one 8 inch cake pan.

In a standing mixer, add egg and oil. Beat until combined. Add buttermilk, vanilla and dry ingredients. Mix at a medium speed.

Pour into cake pan and bake for 35-40 minutes. Cool on a wire rack.

Frosting:

In a standing mixer, add all ingredients and mix until smooth. Frost the top of the cake with the frosting.

Slice both pears in half and arrange halves on top of frosted cake.
