Pumpkin Chocolate Chip Walnut Pancakes

So, I couldn’t miss National Pancake Day. I mean, pancakes are my favorite sweet breakfast. There’s something about that fluffy stack of deliciousness…. yum!

This stack of Pumpkin Chocolate Chip Walnut Pancakes is just what an Autumn morning needs. Drizzled with a little maple syrup and your weekend will be complete!

Make your pancake batter, then stir in pumpkin purée, spices, chocolate chips and walnuts.

Just add the syrup and Done!

These pancakes will make everyone beg for more!

Recipe:

1 cup flour

1 tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 tsp cinnamon

1/8 tsp nutmeg

1 large egg

1/2 tsp vanilla

1 cup buttermilk

2 tbsp melted butter

1/4 cup pumpkin purée

1/4 cup chopped walnuts

1/3 cup chocolate chips or mini chocolate chips

In a bowl, combine dry ingredients and spices. Whisk together. Add egg, vanilla and buttermilk. And combine. Whisk in the purée pumpkin and melted butter. Stir in nuts and chocolate chips.

Place a griddle over medium heat. When hot, scoop about 1/4 of the mixture onto the griddle per pancake. Brown on both sides. Serve with maple syrup.
