Mini Brioche Doughnuts with a Coconut Glaze

Spread the love

I love doughnuts. All flavors, shapes and sizes! There’s just something about that warm brioche dough with a rich sweet glaze.

And these Mini brioche doughnuts with a coconut glaze sprinkled with coconut shavings are no exception.

When you think out coconut, you think of the tropics. But because of the thick white glaze and coconut shavings, they also look like a winter wonderland!

Recipe:

Doughnuts:

1 pk yeast

1 3/4 cups milk

1 tsp salt

1 tsp vanilla

5 cups all purpose flour

3 eggs

1/4 cup sugar

1/2 cup butter, softened

Glaze:

1 & 1/2 cups Powdered Sugar

2-3 Tbsp Coconut Milk

1/2 tsp Vanilla

Topping:

Coconut Shavings

Doughnuts:

Warm milk in the microwave until slightly warm but not hot. Pour in a standing mixer bowl. Sprinkle yeast on top. Let it sit for 5 minutes. Add sugar, salt, vanilla, and eggs. Attach dough hook and turn on the machine. Add the flour a cup at a time. After the flour is in, add the softened butter a tbsp at a time. Let the dough kneed for a few minutes. Place the dough in an oiled bowl, cover with plastic wrap and let it rise for 1-2 hours. Punch dough so it deflates. Cover bowl with plastic wrap and place in the refrigerator overnight. The next day, remove bowl from the refrigerator.

Roll dough into a large rectangle. Use a small round cutter to cut doughnuts out. Use a smaller circle to cut he holes.

Place on a baking sheet.  Cover with plastic wrap to rise.

When the doughnuts have risen, heat vegetable oil in a pot and fry them on both sides until browned

Glaze:

Mix all ingredients. Add more coconut milk if glaze is too thick. Dip the top half of the doughnuts into the glaze. Sprinkle with coconut shavings.
