Lemon Blueberry Waffles

Just because we’re home doesn’t mean we can’t still “Do Brunch.” Just have brunch at home!

Add a glass of Mimosa to these Lemon Blueberry Waffles with a sauce made with Trade St. Jam Co. Blueberry Lemon Basil Jam. Instant brunch!

Waffles:

1 cup flour

1 tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 egg

1/2 tsp vanilla

1 cup buttermilk

2 tbsp milk

2 tbsp butter, melted

1/2 cup blueberries

Blueberry Sauce:

1/2 cup blueberries

1/2 cup Blueberry Lemon Jam

2 tbsp orange juice

Heating waffle iron

Combine Flour, sugar, baking powder, baking soda, and salt in a bowl. Add egg, buttermilk, milk, vanilla and melted butter. Whisk until blended. Stir in blueberries.

Spray waffle pan with nonstick spray. Place about 1/4 cup batter into the iron and bake until golden brown. Repeat until all batter is used.

In a saucepan, add jam, blueberries and orange juice. Cook over medium heat for about 10 minutes. Cool slightly. Spoon over waffles and top with whipped cream.
