Grapefruit Glazed Pound Cake

My grandmother is my main inspiration with my baking. And she made the best pound cake. Her pound cake was at every holiday table.

This Grapefruit Glazed Pound Cake is my updated version of her delicious recipe. It adds a delicious tart, citrus flavor that adds to its already wonderful taste!

Cake:

1 1/2 sticks of butter, softened

1 1/4 cup sugar

3 large eggs

1/4 tsp salt

1/2 tsp vanilla

1/4 cup fresh squeezed grapefruit juice

1 1/2 cups flour

1/2 cup heavy cream

Icing:

1 cup powdered sugar

2 tsp heavy cream

1-2 tbsp grapefruit juice

Grapefruit Slices for garnish

Cake:

Pre-heat oven to 350 degrees. Grease and flour a loaf pan and set aside.

In a stand mixer, cream butter and sugar. Add eggs, salt, vanilla, and grapefruit juice. Mix until incorporated. Add flour and heavy cream. Mix again. Pour into loaf pan. Bake 50-60 minutes or until a toothpick comes out clean when inserted into the middle. Cool on a wire rack.

Glaze:

Mix powdered sugar, juice and cream. Add more cream as needed. Spoon on top of cooked cake. Top with grapefruit slices
