Lemons are definitely one of my favorite fruits. They can be used for making both sweet and savory dishes, and even amazing drinks. The possibilities are endless. Citrus season is normally in the Winter, but I love that lemons are accessible year round.
One thing I love making with lemons is a Summer Lemon Jam. The combination of sour and sweet is simply irresistible. Lemon jam uses fresh lemons which can make the jam extremely tart. So, to reduce the tartness, we cook them in water twice before cooking it the final time and adding the rest of the ingredients.
After pouring off the water a final time, to the lemon slices add the honey, sugar, lemon juice, zest and water. Cook it down until it slightly thickens and the lemon pieces become soft.
Cool in the pot for about half an hour, then pour the mixture into a glass jar with an airtight seal. Leave it in the refrigerator overnight at minimum. You want the jam to thicken and solidify more.
When it’s ready, you can use it for anything. Use it as a spread for toast or muffins. Add it as a topping for pancakes or waffles. One way I love using the jam is as a glaze for chicken or turkey. You can mix some of it with bourbon and/or chicken stock and brush it on the meat at the final stage of cooking. This jam is so versatile, it can be used in many ways. Enjoy!

Summer Lemon Jam

Delicious tart, sweet jam using fresh lemons
Course Snack

Ingredients
  

  • 5 lemons
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1 cup sugar
  • 3 1/2 cups water

Instructions
 

  • Rinse lemons in water. Slice 4 of the lemons into thin slices. Add to a pot. Zest the last lemon and add the zest to the lemons as well as 1 cup of water. Simmer over medium heat for 10 minutes. Pour just the water off. Add the second cup of water. Simmer for another 10 minutes. Pour the water off again. Add the honey, sugar and last cup and a half of water. Cook for 30-45 minutes until the jam has thickened. Pour into a glass jar with an airtight seal. Refrigerate for at least overnight.
