What’s Your Go To Summer Dessert?
When you think of Summertime treats, you think of ice cream first. There’s so many ways to have it. One of my favorites is in an ice cream sandwich. I mean, who doesn’t want creamy delicious ice cream sandwiched between two cookies, or in my case, 2 brownies?!
I used Tillamook’s amazing ice cream to make it happen. Tillamook ice cream is made from only the highest quality ingredients. It has the smoothest texture and is packed with cream for an unforgettable flavor.
So, I made Fudge Brownie Cherry Vanilla Ice Cream Sandwiches with Tillamook’s Oregon Dark Cherry and Old Fashioned Vanilla Ice creams swirled together. Both flavors were extremely delicious.
Here’s how I made them!
I doubled my brownie recipe and divided it between 2 pans to bake. In a third pan, I scooped both the Oregon Cherry & the Vanilla into the pan alternating between the 2 flavors so they get swirled together. Smooth out the ice cream, cover and freeze overnight.
Use a round cookie cutter to cut even sized brownies. Use the same cookie cutter to cut even sized ice cream rounds. Sandwich the ice cream rounds between 2 of the brownies. Place the ice cream sandwiches on a cookie sheet and freeze for at least an hour before serving.

Fudge Brownie Cherry Vanilla Ice Cream Sandwiches
Ice cream sandwiches made with Tillamook ice cream and fudge brownies
Ingredients
Brownies
- 2 sticks butter
- 1 cup oil
- 1 cup dark cocoa powder
- 3 cups sugar
- 4 eggs
- 2 tsp vanilla
- 1 cup flour
- 1 tsp salt
- 1/2 cup boiling water
Ice Cream
- Tillamook Oregon Cherry and Vanilla Ice Creams
Instructions
- Melt the butter, oil, sugar and cocoa power in the microwave or on the stove top. Let the mixture cool for 5 minutes. Add in eggs and vanilla and whisk. Stir in the rest of the ingredients. Add the boiling water at the end. Divide batter in half and pour into two parchment lined 9x13 inch pans. Bake at 350 for 30 minutes. Cool on a wire rack. Refrigerate overnight. Line a third pan with parchment paper. Scoop both the Oregon Cherry & the Vanilla into the pan alternating between the 2 flavors so they get swirled together. Smooth out the ice cream with a spatula. Cover with plastic wrap and freeze overnight. Use a 2- 2 1/2 inch round cookie cutter to cut even sized brownies. Place them on a baking sheet. Clean and use the same cookie cutter to cut even sized ice cream rounds. Sandwich the ice cream rounds between 2 of the brownies. Place the ice cream sandwiches on a cookie sheet and freeze for at least an hour before serving.
