Have You Tried Chocolate Sugar Cookies?

These Chocolate Skeleton Gingerbread Men combines Halloween with a little bit of Christmas. Two great holidays!
This is not my usual rich gooey chocolate dessert, but I wanted to give them a try anyway.
This recipe is from The Cookie Countess who has the best sugar cookie recipes. It’s basically her regulate sugar cookie recipe with the added cocoa powder.
I used Dutch processed cocoa in my cookies to get a darker color. Dutch processed cocoa differs from regular cocoa by the deep, rich color and the more mellow flavor. I usually choose Dutch processed over the regular cocoa in recipes, especially my chocolate cake.

I bought the Skeleton Gingerbread Man cookie cutter from a shop on EtsyIt’s more of a cookie plunger because it has the skeleton sketched in it that shows up on your cookie dough cut out when you use it.

After they were baked and cooled, I used royal icing to make the skeleton outlines.
They were so fun to make and even more fun to eat!

Chocolate Skeleton Gingerbread Men

Halloween Skeleton Gingerbread Men Cookies!

Ingredients
  

Cookies

  • 1 1/2 cups granulated sugar
  • 3/4 cup salted butter, softened
  • 1/4 cup dark corn syrup
  • 2 eggs
  • 1 tsp vanilla
  • 2/3 cup  Dutch processed cocoa
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 3-3 1/2 cups  flour (start with 3 and if your dough seems too sticky add more)

Royal Icing

  • 1 1/2 cups  powdered sugar
  • 2 tbsp warm water
  • 1/2 tbsp light corn syrup
  • 1/4 tsp vanilla

Instructions
 

Dough

  • Using a stand mixer with the paddle attachment, cream together butter and sugar. Add eggs, vanilla, and corn syrup to mixer. Mix at low speed until fully blended. Add the dry ingredients to the wet, one cup at a time with your mixer on low, until all are incorporated. Separate your dough into 3 equal balls. Roll out each ball to about a 1/4" thickness between sheets of wax paper. Then chill these "flats" of dough for at least an hour before baking. Line your baking pans with parchment paper. Use the cookie cutter to cut out the Skeleton Gingerbread Men. Bake at 375 degrees for 10-14 minutes. Cool on a wire rack.

Royal Icing

  • In a small bowl, combine warm water, light corn syrup, and extract. Stir until corn syrup is dissolved. Add sugar water to powdered sugar and stir until completely combined. Mixture will be thick. Add water more water if needed little by little.
