Have You Made a Cookie Box?

Merry Christmas Eve! It’s the day before Christmas and I finally finished my Christmas Cookie Box this year.
What a selection I put together.
And here’s what’s inside:
*Candy Cane Macarons by Sprinkles for Breakfast
*Chocolate Chip Cookies
*Brownies
*White Chocolate Dipped Mini Pretzels
*Stained Glass Xmas Tree Cookies
*Chocolate Brownie Cookies by Frosting and Fettuccini
*Holly Jolly Santa Cookies by Half Baked Harvest
Each was so fun to make.
The Candy Cane Macarons are from Sprinkles for Breakfast. I love how she makes them pink, then adds the red stripes on them. Get the recipe here
The chocolate chip cookies are my classic recipe. You can even add sprinkles for a more festive look. Get the recipe here

The White Chocolate Dipped Mini Pretzels are so easy to make. Just add 1/2 cup vanilla candy melts or white chocolate to a microwave safe bowl with 1 tsp of oil and microwave for 30-45 seconds. Remove. The chocolate will not look melted. Stir until completely melted. dip one half of the pretzel into the chocolate and place on a parchment lined baking sheet. You can leave them plain or sprinkle crushed peppermints or sprinkles on top.
The recipe to the Stained Glass Xmas trees is below. I love these because of the clear center that looks like a glass window!

My favorite cookies in this box are the Holly Jolly Santa Cookies. They are so jolly and festive! I made two versions of these cookies. A Black and a white Santa. We all deserve a to see a Santa that looks like us! Grab Tieghan from Half Baked Harvest’s recipe here:
From the suggestion of @frostingandfettuccine & @cloudykitchen I used a wooden box from Michaels to hold them in. The one I used, I bought  last year and that same box is not in stock anymore, but here’s another version:
Then I used craft wood from Amazon to make the dividers. Craft wood is so soft that it can be cut with an Exacto knife. I measured the length and glued two pieces together so that it fit perfectly. Then I cut more pieces to make smaller boxes as well. So easy!
Add a few mini candy canes, and you have the perfect box. Hopefully, you will make one of these Christmas Cookie Boxes too!

Stained Glass Xmas Tree Cookies

Course Dessert

Ingredients
  

  • 1 cup granulated sugar
  • 1 cup (2 sticks) salted butter, softened
  • 1 large egg
  • 1 tsp vanilla
  • 3 cups flour
  • 1/2 cup clear peppermint candies

Frosting

  • 1 cup butter
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 3 cups powdered sugar
  • forest green food gel

Instructions
 

Cookies

  • Using a stand mixer with the paddle attachment, cream together butter and sugar. Add egg and vanilla. Mix at low speed until fully blended. Then add flour, 1 cup at a time, starting on low speed and then increasing if necessary.
    Roll out to 1/4" thickness. Use a Christmas Tree cookie cutter to cut out the trees. Use a smaller tree cutter to cut out the middle.
    Place parchment or Silpat mats on your baking sheets.
    Bake at 350 degrees for 8 minutes. and remove from oven.
    Crush the peppermint candies by placing them in a zip bag and hitting the bag with a rolling pin until crushed. Sprinkle crushed candy in the middle of each cookie. Bake for an additional 2-3 minutes until the candy has melted and cookies have just started to turn golden brown around the edges. Cool completely in the pan before removing the cookies.

Frosting

  • In stand mixer, whip butter, vanilla and salt. Add powdered sugar and mix more. Add a few drops of food gel until you get your desired color. Add to a piping bag with a small star tip and pipe "pine leaves" over the cookies.
