What is your go-to cake recipe for birthdays?

I love a good Vanilla Cake, or Yellow Cake as many southerners call it. And this yellow cake recipe from Grand Baby Cakes is one of the best!

Why is it called “Yellow” Cake?

Yellow cakes are called “yellow” because both the batter and cake take on a pale yellow color. The batter is made with a combination of whole eggs and egg yolks and real butter which both help to achieve the yellow coloring.

Why I am inspired:

When I first started my food blogging journey, I was inspired by so many bloggers. One person in particular whose recipes resonated with me and my family traditions because of her Southern roots and her grandmother influenced recipes, like my own, is Jocelyn of Grand Baby Cakes
Jocelyn’s Yellow Cake recipe is definitely a classic. When I asked my mom for a chocolate cake for my birthday, it was a yellow cake with chocolate frosting. It’s just a Southern tradition. Jocelyn’s recipe produces such a rich, moist cake. It’s definitely a must try! Thank you for being an inspiration.

How is the Cake is Made?

Start with bringing all of the the ingredients to room temperature. This is so the cake will have the right texture.
Sift the dry ingredients together, then set aside. Cream the butter, shortening and sugar together until smooth. Add in the dry ingredients, vanilla and buttermilk.
I decided to make 3 six inch layers instead of 2 eight inch layers to make a taller cake. Either pan size works well with the measurements of this recipe. Divide the batter between the pans and bake until done. Cool completely and frost with a creamy chocolate buttercream or cream cheese frosting.

Chocolate Cream Cheese Frosting

Creamy Chocolate Cream Cheese Frosting that pairs perfectly with most layer cakes!

Servings 1 cake

Ingredients
  

  • 1/2 cup (1 stick) unsalted butter
  • 1 8oz cream cheese, softened
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 3 1/2 cups powdered sugar
  • 1/2 cup cocoa powder

Instructions
 

  • Beat butter and cream cheese in a bowl or stand mixer. Mix in cocoa and vanilla. Add powdered sugar and blend until smooth.
