There’s nothing better than a moist, warm banana bread. Well, if you add a layer of cinnamon, sugar and pecans, then it becomes the best!

What makes this banana bread so moist?

To make sure your banana bread is moist, use over ripe bananas. The darker the bananas are the better. I also use buttermilk instead of whole milk, which always makes a cake or any bake more moist.
In this recipe, I used butter, but you can also substitute with olive oil. Oil adds more moisture as well.

How is this banana bread like a cinnamon roll?

What makes this banana bread like a cinnamon roll is because of its middle layer. I combined dark brown sugar, cinnamon and chopped pecans to achieve the cinnamon roll flavor.
Start with adding half of the banana bread batter to to loaf pan. Then sprinkle half of the cinnamon roll mixture on top of the batter. Then, add the remaining batter to the pan. Add sliced bananas, then top with the rest of the cinnamon mixture.

Ingredients
  

  • 1 1/2 cups mashed bananas
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 whole banana, for the top, sliced lengthwise

Cinnamon Sugar Mix

  • 1/2 cup packed dark brown sugar
  • 2 tsp cinnamon
  • 1/4 cup chopped pecans

Instructions
 

  • Pre-heat oven to 350. Mix bananas, butter, sugar, vanilla, eggs and buttermilk. Add the flour, salt, baking soda.
    Pour half of the batter into a parchment lined oil sprayed 9x5 loaf pan. Sprinkle half of the cinnamon sugar mixture on top. Add the remaining batter on top.
    Cut 2 banana slices from a whole banana. Place them on top of the batter. Sprinkle with the remaining cinnamon sugar mixture.
    Bake for 1 hour to 1 hour and 15 minutes. Cool completely on a wire rack.
