What is Lasagna?
Lasagna is an Italian dish made of stacked layers of thin flat pasta alternating with fillings such as a tomato sauce, sometimes with meat and other vegetables, cheeses and seasonings and spices such as garlic, oregano and basil.
What makes this lasagna different from others?
Instead of the traditional ground beef usually used in lasagna, I used both sweet and spicy Italian sausage. Both types of sausages adds a spicy, garlic uniqueness to the dish.

How is the Sweet & Spicy Italian Sausage Skillet Lasagna made?
To make the lasagna, start with making the sausage sauce.
Remove both the spicy and sweet sausages from the casings. Add to a hot skillet over medium heat. Sauté and break up the meat as it cooks.
Add crushed tomatoes, tomato paste, onions, garlic, Italian seasoning and chopped basil. Let the sauce simmer for at least 20-30 minutes. You can cook it longer if you have the time. The longer it cooks, the better the seasoning goes through and it tastes better.
Set the sauce aside to start assembling the lasagna.
Add about 1/4-1/3 cup of the sauce to the bottom of the skillet. This is so the noodles won’t stick to the pan. Add 4 cooked lasagna noodles on top of the sauce. Then add, ricotta cheese, more sauce, then mozzarella cheese. Repeat this process again so that the lasagna has 2 layers.
I like to add garnishes on top of the dish so that it looks pretty when serving. These are optional. Add slices tomatoes, basil leaves and sprinkle on parmesan cheese.
Bake until the lasagna is bubbling.

Ingredients
- 8 lasagna noodles, boiled to al dente
- 4 oz mozzarella cheese, shredded or sliced
- 2 cups ricotta cheese
- 6-8 fresh basil leaves
- 1/2 cup parmesan cheese
- 1 small tomato, sliced
- sweet & spicy Italian sausage sauce
Sweet & spicy Italian sausage sauce
- 1/2 lb sweet Italian sausage, casings removed
- 1/2 lb spicy Italian sausage, casings removed
- 1 tbsp olive oil
- 28 oz can crushed tomatoes
- 2 tbsp tomato paste
- 3 cloves garlic, minced
- 4 large basil leaves, chopped
- 1/2 small yellow onion, chopped
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Instructions
Sauce
- In a skillet over medium heat, add olive oil and sausages. Sauté and break up with a spoon until fully cooked. Add onions and garlic and continue to cook for 5 minutes.Add crushed tomatoes, tomato paste, basil, Italian seasoning, salt and pepper and simmer over low heat for 20-30 minutes. Remove from heat and set aside.
Lasagna
- In a large skillet, add 1/4 cup of the sauce. Layer 4 of the lasagna noodles on top. Spread half of the ricotta cheese over the noodles. Add half of the sausage sauce, then halve of the mozzarella cheese.Add a second layer by repeating the layering process again. Place down the 4 remaining lasagna noodles, spread the remaining ricotta cheese, add the remaining sauce and mozzarella cheese. For the garnish, on top of the lasagna, add slices of tomato, basil leaves and parmesan cheese. Bake in a 375 degree oven for 40-45 minutes or until the cheese starts to brown and the lasagna is bubbling. Cool for 5-10 minutes before serving.
