Hocus Pocus Poisoned Apple Pie

Hocus Pocus is one of my kids favorite movies that we watch all the time. And today, Hocus Pocus 2 is coming out on Disney Plus and we can’t wait to watch it! So, in honor of the movie, I put together a Hocus Pocus Poison Apple Pie!

What makes this pie “poisonous?”

Don’t worry, one bite will not take you out because the “poison” in the pie is actually whiskey and red wine!
Boozy pies are like drinks and dessert in one. The best of both worlds! Spirits like whiskey is an incredible way to add depth of flavor to your apple pie. And when the red wine combines with the apples, it gives it a fall crisp mulled wine taste.

How to you make the pie crust decor?

To make the decorative pie crust, I used a Hocus Pocus themed embosser that I purchased from a shop on Etsy. Roll out the top pie dough, then use the embosser to press into the center. After the image was in the dough, I used an exacto knife to cut out the witches silhouettes. I also sliced and outlined many of the letters so that the words stood out more.
If you don’t use this particular embosser, you can use any type of Halloween cookie cutters or stencils to create whichever type of theme you like for the pie.
After the scene is cut out, place the pie dough on top of the pie dish with a bottom dough and the apple filling. Seal the edges by pinching the dough around the sides of the pie. Use various Halloween cookie cutters and/or plunges to add spooky shapes around the perimeter of the pie.

What is the difference between a cookie cutter and a cookie plunger?

A cookie cutter just cuts out a shape from the dough that looks like a silhouette. A cookie plunger cuts and emboss realistic designs into the dough. So, when I used a skull cookie plunger, after the skull was cut out, the facial features were shown on the cut out skull.

Do you have to use a homemade pie dough for this recipe?

You do not have to use a homemade pie dough for this pie. Pre-made refrigerated pie dough will work just as well. But, because of the addition of the decorative cut outs around the pie, you will need 3 rolled pie dough rounds or 1 1/2 boxes of the dough.

Can the pie be made ahead of time?

You can make this pie, but do not brush it with the egg wash.  Place it into the freezer for an hour, then wrap it twice with plastic wrap. When ready to bake, remove it from the freezer, brush it with the egg wash and bake it while frozen. You will have to add additional baking time. Up to 1/2 an hour.

Ingredients
  

  • 3 refrigerated pie crust rounds or a homemade double pie crust

Butter Pie Dough

  • 3 cups all purpose flour 
  • 1/2 tsp salt
  • 2 tbsp granulated sugar
  • 1 cup + 6 Tbsp unsalted butter, cubed and frozen
  • 1/4 cup ice cold water (more if necessary)

Filling

  • 4-5 apples, peeled, cored and thinly sliced
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 tsp lemon juice
  • 1 tbsp whiskey
  • 2 tbsp red wine
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla
  • 2 tbsp vanilla
  • 1 egg + 1 tsp milk

Instructions
 

Dough

  • Combine flour, sugar, and salt in a food processor. Pulse to combine. Add butter and pulse for a few seconds to just combine the flour and fat. Pour in water, a little at a time, until dough comes together. Divide the dough in half and shape each half into a disk. Wrap each one and place in the refrigerator for an hour or overnight.

Filling

  • To a large mixing bowl add sliced apples, granulated sugar, brown sugar, lemon juice, whiskey, red wine, cinnamon, nutmeg and vanilla. Mix just until combined. Add flour and slightly mix again.

Assembly

  • If using pre-made refrigerated pie crusts, place one sheet of pie dough into the bottom of a 9 inch pie pan. Add the filling, then proceed with the directions for the top crust listed below.
    If using a homemade pie dough, remove dough from the refrigerator. Roll one disk of dough out and place in the bottom of a 9 inch pie pan. Spoon all of the pie into the pie pan.
    Roll out the second disk of dough. Place the picture embosser, stencil, or any other Halloween cut out on top of the dough. Press until it imprints on the dough. Remove. Cut out whichever parts of the image you want. Lay the dough on top of the filling. Trim off the edges around the pie and crimp the dough so that the filling stays in.
    Roll out and use any leftover dough to cut out additional Halloween shapes with cookie cutters/plungers. Add the egg and milk to a small dish and beat with a fork. Use a pastry brush to brush the egg wash around the top edges of the pie. Add the Halloween cuts outs to the pie around the edges. Brush the entire pie with the egg wash. Place the pie in the freezer while the oven pre-heats to 350 degrees.
    Bake the pie for 1- 1 hour and 15 minutes or until the crust is browned. Cool on a wire rack and serve.
