Now that Spring is finally here, it’s time to make beautiful seasonal desserts! Springtime is full of bright colors and wonderful scents, like vibrant fresh fruits, which are in my strawberry sheet cake, my strawberry, peach and blueberry sheet cake and these White Chocolate Cheesecake Parfaits!

 

 

What are parfaits?

Parfaits are a layered dessert served in a clear glass or cup to create a visually appealing treat. Usually the layers consist of a creamy layer and a fruit layer. In this easy parfait recipe, there is a layer of cookie crumbs, no-bake cheesecake, fruit compote and fresh fruit.

Parfaits originated in France in the late 1800’s as a frozen custard made by boiling eggs, sugar, and cream.

 

What are the main ingredients used in the White Chocolate Cheesecake Parfaits with Berries?

Cheese- Full fat cream cheese is important to use for the no-bake cheesecake layer. Low fat cream cheese has more water in it so they are softer and will not hold its shape as well.

Sugar– Powdered sugar is best to use because it will blend and dissolve better in the cream cheese since this is a no-bake cheesecake. If the cheesecake was going on the oven, regular granulated sugar would work because it would dissolve with the heat of the oven.

Chocolate– Use a good quality white chocolate bar or chips for the recipe. You want something that will melt well and be very smooth.

Liqueur- Mozart White Chocolate Liqueur is used in this recipe.

Cookies- Biscoffs are a great cookie to use as a crumb base.

Berries- A combination of raspberries and strawberries give these parfaits an amazing fruit taste!

 

What liqueur is used in the White Chocolate Cheesecake Parfaits with Berries recipe?

These White Chocolate Cheesecake Parfaits with fresh berries feature Mozart White Chocolate Liqueur and are the perfect Spring desserts!

Mozart White chocolate liqueur has a light texture and elegantly incorporates notes of vanilla and caramel in rich cocoa butter and cream. It’s creamy texture and sweet chocolatey flavor make it the perfect addition to dessert and cocktail recipes.

How is the berry compote made?

To make the Berry compote, add fresh raspberries, strawberries, sugar and lemon juice to a small saucepan. Cook the compote until the berries release their juices. This can take 10 minutes or more. The liquid in the mixture will look a bit thin at this point, but it will thicken up slightly as it cools down.

 

How are the White Chocolate Cheesecake Parfaits made?

For the crumb layer, add cookies and melted butter to a food processor. Pulse until the cookies are fully crushed. If you want to crush the cookies by hand, add them to a large zip bag, seal the bag and crush with a rolling pin or the batt of a cooking pan. Once the cookies are crushed, add the crumbs to a bowl, then pour in the melted butter and stir.

For the cheesecake layer, In the bowl of a stand mixer or in a medium bowl with a hand mixer, add softened cream cheese and powdered sugar. The cream cheese needs to be softened to blend until smooth. Leave the cream cheese out of the refrigerator for a couple of hours until it is nearly room temperature. Mix the cream cheese and powdered sugar until the mixture is smooth.

Melt the white chocolate by adding it to a double boiler on the stove, or to a small microwave safe bowl and microwave for about 30 seconds and stir until melted. After stirring after the 30 seconds, if the mixture is still not melted, then melt for additional 15 second increments and stir in between until it’s fully melted.

Add the melted white chocolate and Mozart White Chocolate Liqueur into the cheesecake mixture. Mix until fully blended and smooth.

How are the White Chocolate Cheesecake Parfaits assembled?

Add 2-3 teaspoons of the cookie crumbles to the bottoms of 4-6 six ounce coupe glasses. Press down gently with a spoon. Add this easy cheesecake filling to the glasses until the glasses are ¾ filled to the top. You can add the mixture with a spoon or with a piping bag, depending on the size of the opening of your glasses.

Refrigerate glasses for 4 hours or overnight, if you want to prepare these desserts a day ahead.

After refrigerating, add 1-2 tablespoons of the berry compote to the parfaits. Top with fresh raspberries, halved strawberries and crushed freeze dried raspberries. Then garnish the parfaits with a dusting of crushed freeze dried raspberries for an extra lovely touch. This homemade white chocolate cheesecake parfait recipe is so good and the white chocolate liqueur elevates it to another level!

Commonly asked questions:

Can another type of cookie be used in the recipe? 

Any shortbread type of cookie would work as well.

 

Can you make this dessert ahead of time? 

Yes, you can make these parfaits ahead of time. It’s best to put the parfait together just before serving, but you can prepare each part in advance and store them separately in the refrigerator.

 

Can you use different fruits in the parfait?

Yes, you can substitute the raspberries and strawberries with other types of berries like blueberries and blackberries. You can experiment with different combinations to find your favorites.

 

Can I substitute the cream cheese with something else?

Yes, if you don’t want to use cream cheese, you can also use ricotta or mascarpone cheese. However, the flavor and texture of the parfait may change and be different.

 

Can I substitute the white chocolate liqueur with something else?

If you don’t want to use alcohol in the recipe, it can be omitted. Simply substitute the liqueur with 1/4-1/2 cup of heavy cream. Start with 1/4 cup and mix. If the filling still seems too thick, add an additional 1/4 cup and mix until smooth.

Mozart White Chocolate Cheesecake Parfaits with Fresh Berries

Equipment

  • 6 coupe glasses
  • 1 stand mixer
  • 1 food processor

Ingredients
  

Berry Compote

  • 1/2 cup raspberries 
  • 1/2 cup diced strawberries 
  • 1 tsp lemon juice
  • 1 tbsp granulated sugar

Crust

  • 1 cup biscoff cookies or shortbread cookies (8-10)
  • 1 tbsp melted butter

Cheesecake

  • 2 8oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup Mozart White Chocolate Liqueur 
  • 1/3 cup white chocolate chips
  • 1/2 tsp vanilla 

Garnish

  • Raspberries 
  • Strawberries
  • Freeze dried raspberries 

Instructions
 

Berry Compote

  • To a small saucepan over medium heat, add raspberries, strawberries, sugar and lemon juice. Cook for approximately 10 minutes until the berries release their juices. Remove from heat and cool completely.

Crust

  • Add cookies and melted butter to a food processor. Pulse until the cookies are fully crushed. Set aside. 

Cheesecake

  • In the bowl of a stand mixer or in a medium bowl with a hand mixer, add softened cream cheese and powdered sugar. Mix until smooth.
    Melt the white chocolate by adding it to a double boiler on the stove, or to a small microwave safe bowl and microwave for about 30 seconds and stir until melted. After stirring after the 30 seconds, if the mixture is still not melted, then melt for additional 15 second increments and stir in between until it’s fully melted. 
    Add the melted white chocolate and Mozart White Chocolate Liqueur. Mix until fully blended and smooth. 

Assembly
