Mini Vanilla Bundts with Vanilla Glaze

Ingredients

Cake

  • 1/2 cup olive oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup buttermilk

Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla

Instructions

  • Pre-heat oven to 350 degrees. Oil and flour a 6 well mini Bundt pan. In a standing mixer bowl add oil and sugar. Mix in eggs and vanilla. Add dry ingredients and buttermilk and blend. Spoon batter into each of the mini Bundt well. 
Bake for about 1 hour. Cool and spoon glaze on top of each.

Glaze

  • Mix powdered sugar, 2 tablespoons milk and vanilla In a bowl. If you want it to be thinner, add more milk.
