Bundt cakes are my favorite type of cakes. Mainly because they take on the beautiful artistic shape of the Bundt pan that you use. And These Mini Vanilla Bundts with Vanilla Glaze have such a pretty Bundt shape

What Pan Did I Use To Make The Mini Vanilla Bundts with Vanilla Glaze ?

These were baked in the miniature version of Nordic Ware’s Heritage Bundt pan. I love the swirling shape of this pan. It gives your cake such an elegant unique look!
And using their miniature Bundt pan, everyone gets their own cake!

How Much Batter Is Needed?

Because there are only 6 Bundt wells in the pan, I used half of a cake recipe. If you want the full recipe, make these twice and use 2 pans.

Why Use Olive Oil Instead of Butter?

I like using olive oil in cakes much better than butter because it gives the cake a much softer texture. Even when I use a combination of olive and butter, I notice that the cake is a little dry, so I prefer all olive oil.

How Do I Make The Bundts?

Start with mixing the olive oil and sugar. Add in the eggs and vanilla. Then add the dry ingredients and buttermilk.
Use a spoon to add the batter to the pans because the wells are so small. You don’t want to pour the batter in and it gets all over the pan. Bake for approximately one hour or until the cakes are browned.
For the glaze, mix the powdered sugar, vanilla and milk. If you like a thicker glaze, use 1 & 1/2 to 2 tablespoons of milk. If you like the glaze thinner, use 3 tablespoons of milk. Spoon it over the cooled cakes and serve.

Mini Vanilla Bundts with Vanilla Glaze

Ingredients
  

Cake

  • 1/2 cup olive oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup buttermilk

Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla

Instructions
 

  • Pre-heat oven to 350 degrees. Oil and flour a 6 well mini Bundt pan. In a standing mixer bowl add oil and sugar. Mix in eggs and vanilla. Add dry ingredients and buttermilk and blend. Spoon batter into each of the mini Bundt well. 
Bake for about 1 hour. Cool and spoon glaze on top of each.

Glaze

  • Mix powdered sugar, 2 tablespoons milk and vanilla In a bowl. If you want it to be thinner, add more milk.
