This is a recipe for Chewy Browned Butter Oatmeal Cookies with Toasted Pecans and Toffee Bits. There are no raisins in this cookie. I’m not a huge fan of raisins in oatmeal cookies. I know, I know, I’m in the minority. Most people love raisins. If you love raisins, then definitely add them to the recipe.

You will definitely love these cookies.  They are simply the best!

Chewy Browned Butter Oatmeal Cookies with Toasted Pecans and Toffee Bits

Ingredients
  

  • 1 stick butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup flour
  • 1 1/2 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup toffee bits

Instructions
 

  • Melt the butter in a small pot until it stops bubbling and Browns slightly. Pour into a bowl. Cool for 15 minutes. Add sugars, vanilla and egg and mix. Add the rest of the dry ingredients. Place in the refrigerator for an hour or overnight. Take bowl out of the refrigerator and scoop into balls with a cookie scoop. Bake in a pre-heated over at 375 degrees for 8-9 minutes. Do not over bake or they will not be chewy.
