Piña Coladas

Imagine you’re on a beautiful white sandy beach staring out at the crystal blue water, holding Frozen Piña Colada your hand…. Paradise! Ok, back to reality…

But you can make it at home just in time for National Piña Colada day! In a blender combine fresh cut up pineapple and cream of coconut. I use cream of coconut opposed to coconut milk to give it some sweetness. If you don’t want the added sugar, you can just use coconut milk. Then to that add about 2 cups of ice, and rum. It can be light or dark. The dark rum will make the drink a little stronger. But you can always leave out the alcohol all together if you don’t drink alcohol or if the kids are having some too. I usually make it without the rum, so my kids can have some, then add the rum to the adults’ glasses after the Piña Colada is poured in the glasses. Then add my favorite secret ingredient…. a scoop of pineapple coconut ice cream. Believe me, do not skip this step! The ice cream will make the drink so creamy and smooth. You can also use vanilla ice cream as well.

Blend it all up, and pour it into glasses. Garnish with pineapples and maraschino cherries.

Piña Colada

Ingredients
  

  • 1 1/2 cups ice
  • 1/2 cup pineapples, diced
  • 2 ounces cream of coconut
  • 2 1/2 ounces rum
  • 3 scoops pineapple coconut ice cream
  • 1/4 cup heavy cream
  • pineapple wedges for garnish
  • maraschino cherries for garnish

Instructions
 

  • Place ice, diced pineapples, cream of coconut, rum, ice cream, and heavy cream in a blender.  Blend until smooth.  Pour into glasses and garnish with pineapple wedges and cherries.
