Mixed Berry Thyme Hand Pies

I love pies, but sometimes only I want some, not everyone in my house. So, do I make a whole pie just for me? Then eat most of it and feel so guilty? There’s a solution. Make hand pies!

It’s the perfect small individual portion of pie. And this is the quick and easy version. You can make the filling ahead of time and use some when you want to make a couple. Freeze the leftover filling until you use it again.

I also used pre-made pie dough for these quick and easy Mixed Berry Thyme Hand Pies. It’s so delicious and so convenient!

Recipe:

1 cup blueberries

1/2 cup blackberries

1/4 cup sugar

1/4 cup water

1 tsp cornstarch

2 sprigs of thyme

1 box refrigerated pie crusts

1 egg

1 tsp water

Sugar crystals

In a saucepan over medium heat, place berries, sugar, thyme, cornstarch and water. Let the mixture come to a simmer and until the Fruit is tender. ( about 10-15 minutes)

Cool completely or refrigerate overnight.

Use a Cut & Seal press to cut out circles out of the pie crusts. You can also use a round cookie cutter. Add filling to the middle of the dough rounds. Leave a 1 inch border. Place a second dough round on top. Use the Cut & Seal to seal the two together or use a fork to mash them together using the fork all around the pies. Place on a parchment lined baking pan.

Use a knife to cut 2 slits on top of each pie. Combine egg with 1 teaspoon of water. Brush on top of each hand pie.

Sprinkle with the sugar. Bake in a pre-heated 350 degree oven for 15-25 minutes or until browned. Cool in the pan.
